I would say; start with one niche and pick something you like! You can always create a second Medium page (or blog) if you are multi-passionate and want to expand in the future. Right now though as you're starting, I'd pick one niche/stick to it! Once you start growing your Medium page and making money, you can always re-invest that money and outsource some of the work to focus on building a second page.
